A few weeks ago my husband came home from a business trip raving about some sandwich he had at some restaurant in some little city in the middle of nowhere. Apparently the best sandwich ever.  He described it in great detail and I took careful notes. This week I did my best to recreate it and the result was life-changing.

This life-changing sandwich, which I will share with you in the future, features cajun chicken, pepperjack cheese, and freshly sliced jalapeños. I had three within 24 hours. My husband should come back from more business trips with ideas for fantastic culinary adventures. That is his new assignment. Try new foods and bring me mouthwatering details so that I can recreate them. Genius.

In my quest to reinvent that sandwich, I created the most incredible Cajun seasoning for the chicken.  I couldn’t stand to only have it on the sandwich, I needed more. So I made more seasoning, and more chicken and had a whole lot of mouthwatering Cajun chicken goodness this week. Honestly this chicken is SO good! Serve it up with limes if you want, and rice! We loved it and I plan on making it again and again at my house!

Cajun Chicken

Cajun Chicken – Juicy chicken seasoned with Cajun spices and bursting with flavor! Ready and on the table in just 20 minutes!

Ingredients 

  • 4-6 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons paprika
  • ½ teaspoon pepper
  • ½ teaspoon onion salt
  • ½ teaspoon cayenne pepper
  • ½ teaspoon oregano
  • ¼ teaspoon red pepper flakes

Instructions 

  •  Heat pan or skillet to medium heat and grease with cooking spray. Add spices to a small bowl. Mix to combine. Generously sprinkle seasoning over both sides of chicken breasts. 
  • Cook each chicken breasts 4-5 minutes each side, until cooked through and juices run clear. Serve with rice if desired. 

Notes

This chicken can also be prepared in the slow cooker, shredded, and added to your favorite main dishes like tacos, enchiladas, or soups.
