  • Butter: Every good pan sauce starts with a knob of butter! This will bubble and get golden in the pan while you sauté the shallot.
  • Shallot: This adds a lot of flavor and aroma! I like to chop mine pretty small so that it doesn’t change the texture of the sauce that much.
  • Blue Cheese: Blue cheese crumbles will melt into the sauce seamlessly.

Here’s How to Make It

  1. Melt Butter & Sauté Shallot: Melt the butter in a medium saucepan over a medium heat. Add the shallot with a pinch of salt and gently cook for about 5 minutes until soft and just starting to color. (photos 1-2)
  2. Create Sauce: Splash in the apple cider vinegar and allow it to bubble for one minute before stirring in the heavy cream, half the blue cheese, Worcestershire sauce and garlic powder. Once the mixture is bubbling, allow to cool for 5 minutes so that the cheese melts and the sauce thickens. (photos 3-4)
  3. Add Remaining Ingredients: Remove from heat and stir in the remaining blue cheese and the chives. Season to taste with salt and pepper, and serve immediately! (photos 5-6)

Expert Tips

  • For extra flavor, pan sear your steak in the same pan that you plan to make the sauce! You can keep the brown bits that come off the steak in the pan and they will end up adding loads of flavor to the sauce.
  • For a thicker sauce, keep stirring and cook at a low simmer until the sauce has reduced slightly and thickened! If the sauce is too thick, add a splash of milk or even lemon for a slightly lighter flavor!
  • Serve this blue cheese steak sauce with steak and potatoes and your choice of vegetable, or even pair this with leaner meats like chicken with garlic herb butter!

Ingredients 

  • 1 tbsp butter
  • 1 banana shallot, finely chopped
  • salt, to taste
  • 4 tbsp apple cider vinegar
  • ½ cup heavy cream
  • 6 oz blue cheese, crumbled and divided
  • 1 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • black pepper, to taste
  • 1 tbsp chopped chives

    This was so good! I didn’t have apple cider vinegar and subbed for red wine vinegar, and it came out so good! Served it over steak and herbed potatoes. Will definitely make it again.

    There is a reference of white wine. No picture of wine with rest of ingredients. And. nothing noted about white wine in instruction or in the ingredient list at the end.
