People, these bars are ridiculous. Ridiculously, insanely, no good for my waistline delicious.

I wish I could say I had some witness to vouch for this but all I’ve got is my constant craving for these long-gone babies. And I did actually share these (for breakfast, shhhh!) with my husband before they disappeared. He says he’ll vouch.

And I quote, “Oh those! They were super delicious.”

Caramel Chocolate Chip Oat Bars

Ingredients 

  • ½ cup oats
  • 1 ¼ cups flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter
  • ½ cup brown sugar
  • ¼ cup sugar
  • ½ teaspoon vanilla
  • 1 egg
  • ¼ cup semi-sweet chocolate chips
  • ¼ cup milk chocolate chips

Topping

  • ¾ cup caramel sauce, (ice cream topping)
  • 6 tablespoons flour
  • ¼ cup milk chocolate chips
  • ¼ cup semi-sweet chocolate chips

Instructions 

  • Preheat oven to 350. Heavily spray an 8×8 inch pan with cooking spray. Combine oats, flour, baking soda, and salt in a bowl and set aside.
  • Cream together butter and sugars until light and fluffy. Mix in vanilla and egg. Stir in chocolate chips.
  • Add dry ingredients to wet ingredient and mix to combine. Spread mixture into greased pan. Bake 13-15 minutes.
  • Mix together caramel sauce and flour. Sprinkle chocolate chips over baked bars. Pour caramel mixture over chocolate chips, covering entire bars. Allow to cool completely before cutting. Store in airtight container.

      These are ADDICTING!! Dangerously delicious. I have only tried them with old fashioned oats (not quick) so I’m not sure how they’d come out with quick oats… If you try it out, let me know!
