Why This Recipe Works

So easy to make: This baked brie recipe only requires a few ingredients that you can easily find in just about any grocery store. Just bake the brie, caramelize the onions, and put it all together when the brie is melted. 

Easy to customize: Don’t like onions? Leave them out of the roasted brie recipe. Can’t find fig jam? Substitute raspberry. Aren’t a fan of nuts? Skip them! Any way you make it it will still be so tasty. 
Can be scaled up or down: Feeding a crew? Use the big wheel of brie. Just the two of you? Purchase a wedge of brie. Add more or less of the rest of the ingredients depending on your party size and appetite. No matter how much or little you make of this baked brie with fig jam, you’re sure to be glad you did!

Ingredients

Brie Cheese Chilled — Use any kind of brie you like. I have been known to get whatever’s on sale. Once you add the rest of the ingredients, any brie will taste so good. 

Yellow Onion Thinly Sliced — I like the addition of caramelized yellow onions to the brie. I don’t recommend using another kind of onion, if you choose to add them to this holiday appetizer recipe.  

Butter — You’ll need butter for caramelizing the onions in this easy baked brie. I use salted but you can use whatever you have on hand. 

Fig Jam — There’s just something about the combination of fig jam with the brie and onions and candied nuts that is the perfect combination of flavors and textures. 

Pecans or Walnuts — I like to add candied or toasted pecans or walnuts to the top of this simple roasted brie cheese. You could also use pistachios or skip the nuts all together. 

Honey or Hot Honey — Mmmm is there anything bad about honey drizzled over cheese? Or hot honey? Enough said. 

Fresh Herbs — If I’m serving this roasted brie cheese for a holiday I like to make it a little fancier by adding fresh herbs like rosemary or thyme, but you can totally skip this step. 

Crackers, Apples, Pears, Bread  — While you could very well eat this brie with a spoon I recommend serving it with sliced baguette, crackers or sliced apples or pears. 

How to Make It

You almost don’t need directions to put this simple brie appetizer together…almost. 

  1. First, preheat the oven to 350 degrees, then line a baking dish or sheet with parchment paper or foil. 
  2. While the oven heats, add the sliced onions to a skillet and sprinkle with salt. Once they’ve cooked for a few minutes, turn the heat down and add the butter. Cook for an additional 10 minutes, or till the onions are soft and caramelized. Do not take off the heat just yet. 
  1. Take your wheel of brie and score little slices into the top with a knife, then place it on your lined pan. Put in the oven for 10 minutes, or until melty.

  1. Add the brown sugar to the onions, stirring for a minute or two and then turn off the heat and add the nuts to the same pan. 
  2. Take the brie out of the oven and top with the fig spread, the onions and nuts, and fresh herbs. Arrange cut up bread and fruit around it and serve.

Expert Tips + Tricks 

  • No fig jam? No worries! In this case I use raspberry jam, or I’ve even tried apricot as a second backup and it’s great too! 
  • If you are in a rush you can totally skip the caramelized onions and just melt the brie, add the jam, then the nuts and fresh herbs if you are using. 
  • If you have any leftover brie, it will keep in the fridge for a couple of days. I would reheat in the oven for best results.

How Are You Supposed to Eat Brie?

There are many ways to eat brie, my favorite, of course is this baked brie recipe. Other ways include: 
– At room temperature, served atop bread or crackers. You can leave the rind or remove it, depending on your preference. 
– You can also serve it at room temperature on your favorite sandwich. 
– In addition to eating brie on top of bread or crackers, you can also put a small wedge on top of a thinly sliced pear or apple.
– Brie is also delicious when served with dried fruit like apricots and figs. 
– Top room temperature or melted brie with preserves like fig or raspberry. 
– Brie is also delicious with pitted olives. The briney olives complement the musky brie so well. 
– If you want to bake brie in another way outside of the appetizer, you can add it to a grilled cheese or inside a puff pastry with honey for a savory dessert. 
– I’ve also been known to add brie to a pizza with pesto, roasted garlic, and a drizzle of hot honey — delish!

What Does Brie Taste Like?

Brie is definitely a different-tasting cheese if you’ve never had it before. All at once nutty, buttery, and earthy, with a strong nose (smell) that is great on its own or with a sweet accoutrements (like jam or fruit). 

The brie you choose will smell and taste stronger the older it is (the more it has been aged before selling). Brie is covered in an edible rind (though some people prefer to remove it). Inside the rind is a smooth, creamy cheese that melts well while still retaining a spreadable shape.

Ingredients 

  • 1 wheel brie cheese, chilled
  • 1 yellow onion, thinly sliced
  • salt, a big pinch
  • 4 tablespoons butter, I used salted
  • 1 jar fig jam or fig preserves, see note for substitute
  • ½ cup candied or toasted pecans or walnuts
  • 3 tablespoons honey, or hot honey
  • fresh herbs for topping, optional, rosemary or thyme work great
  • crackers, apples, pears, bread, for serving

Instructions 

  • Preheat oven to 350 degrees. Line a baking sheet or baking dish with parchment or foil. While oven is preheating, proceed with next step.
  • In a skillet (I like cast iron and do not recommend stainless steel for this), sprinkle onions with salt and saute over medium-high heat for 3-4 minutes. Reduce heat to medium-low and add butter to skillet. Cook 10 minutes, stirring occasionally. Keep on the heat while proceeding with next step.
  • Score top of Brie wheel and place on parchment-lined pan. Bake for 10 minutes. 
  • Stir brown sugar into onions for 1-2 minutes and turn off the heat and stir in the nuts.
  • Remove brie from the oven. Top baked brie with fig spread, caramelized onions and nuts, and fresh herbs (if using). Arrange apples and crackers around the brie for serving. Cut into the brie and serve immediately. Enjoy!

Notes

The fig jam: if you don’t care for fig jam or can’t get your hands on some, raspberry jam works great here!
The caramelized onions: if you really want to make this recipe super duper quick, skip the caramelized onions and just serve it with the jam and nuts!
