A fun summertime dessert based on the ultra popular Dirty Dr. Pepper drink! Cool and creamy coconut lime sorbet takes a refreshing drink to a whole new level!
I told you yesterday that I was never much of a juice drinker, except for freshly squeezed lemonade. Well, another shocker, I’m not really a soda drinker either. I never liked it growing up because the carbonation burns my throat and the flavors of almost every soda do not appeal to me. I remember the first time my sister Sherry let me try some of her Coke one time and I declared that it tasted like “fruity Root Beer”. That kind of stuck with me and I still claim that is what Coke tastes like. My husband will most likely laugh when he reads this because he’s heard me say it numerous times.
The ironic part about the “fruity Root Beer” thing is that Root Beer is the only soda I actually did like when I was little. I still didn’t drink it very often, usually just a sip of someone else’s now and then. But it’s the only soda flavor I enjoyed.
So there’s a few reasons I don’t really drink soda. 1) It burns my throat. Jalapeños? I can do that, I eat em like candy. But carbonation, no way. Go figure. 2) I don’t care for the flavor of almost any soda. Usually when I tell people that they say, yeah you have to acquire a taste for it. Which is a discussion for another day because I don’t get why you’d force yourself to acquire a taste for anything unless it was something you need for your health. But like I said, a discussion for another day. 3) I danced and played sports growing up and my coaches all sort of banned soda, they said it slows you down or something like that. Don’t know if that’s true but it didn’t really matter cause I didn’t like soda anyway. Not a problem. And 4) I’ve never felt like soda quenches my thirst. So if I have soda, I still have to have a glass of water. No matter how thirsty I am and how much soda I drink, I’m still parched til I get my water.
I’ve probably got you all sorts of confused now. “Why is she telling us she hates soda and sharing a soda recipe with us all in one post?? Weirdo….”. I know, seems contradictory. But the moral of this story is that I’ve come to like soda a few particular ways, and one of them is a Dirty Dr. Pepper. Some of you are already cheering me on because you, like me, have jumped on the Dirty Dr. Pepper bandwagon. And a few of you are trying to figure out why the heck anyone would put dirt in their soda pop. Allow me to explain: Dirty Dr. Pepper = Dr. Pepper (didn’t see that one coming, did you?) + coconut + lime. Sound weird?? Try it. You’ll understand the craze.
My husband got on board with Dirty Dr. Pepper before I ever did but eventually I tried it and I’m hooked too. Now that it’s summertime and it is h.o.t.t. outside, I’ve been wanting super cold treats to cool off in the afternoon and when we stopped at R.B.’s the other day to get a Dirty Dr. Pepper, I absentmindedly thought, gee this would be 10.5 billion times better with ice cream in it . . .
Ding ding ding! It had to be done. Instead of “ice cream” though I made a sorbet which works well with the coconut and the lime, plus it takes less time to freeze than ice cream does which means the float is coming to your mouth sooner, obviously a plus. If you’re a Dirty Dr. Pepper fan, you HAVE TO TRY these floats! If you haven’t had a Dirty Dr. Pepper, we can’t be friends. Joke! You really should try these floats though so we can be even better friends. 🙂
- 3 cans Dr. Pepper soda (for a healthier treat use Dr. Pepper 10 - it's our favorite! But any Dr. Pepper soda will work), chilled
- 1 cup sweetened coconut milk (not condensed - you can find coconut milk in the Asian section at your grocery store)
- ½ teaspoon coconut extract
- 4 cups limeade (I used Simply Limeade but you could use another brand or make fresh limeade as well)
- optional: limes for garnish
- In a large bowl whisk together coconut milk, limeade, and coconut extract. Either 1) freeze in your ice cream maker according to your maker's instructions and then freeze for 30-60 minutes in a shallow container OR 2) Pour mixture into a shallow container and freeze at least 4 hours or overnight.
- To prepare floats, place a couple of scoops of sorbet into your serving glasses (I used mason jars but you can use any cups/mugs/glasses you like). Pour chilled Dr. Pepper into glasses. Serve immediately with a straw or spoon and garnish with limed if desired. Enjoy!
