Annnnnnd we’re back. Whew. After a long, much needed break this weekend, we’re back to smoothies, tacos, and cupcakes. Oh man, shouldn’t have said that. Where’s a chocolate cupcake when you need one??

One of my very top-fav things about summertime is the berries. Strawberries, blackberries, and those beautiful blueberries. And my two preferred ways to eat them are piled high atop a mountain of greek yogurt, or in a cool and creamy smoothie.

On a hot summer day there’s really nothing that satisfies and cools you off quite like a smoothie. In this case, it’s a blueberry smoothie. Nice n’ creamy and that secret ingredient – avocados! Avocados are healthy right?! And that makes me personally feel a bit better when I have a smoothie for breakfast.

A quick and healthy creamy blueberry smoothie, perfect for breakfast or an afternoon pick me up!

Ingredients

  • 1 avocado, diced
  • 2 cups frozen blueberries
  • 6 ounces blueberry greek yogurt (about 1/2 cup)
  • 1-2 cups milk or water (I used almond milk)
  • 1/2 cup ice
  • 1/8 teaspoon vanilla
  • sweetener to taste

Instructions

  1. Add 1 cup of milk and remaining ingredients to a blender. Puree until smooth. Add milk 1/4 cup at a time until desired consistency is reached.

    Thanks Krista! This smoothie is suppperrrr yummy! As for the white background, it’s seriously just practice practice practice! I started practicing with getting the washed out lighting months before I ever posted a recipe with that kind of look – and even then I hadn’t mastered it! It’s messing with your camera settings, (playing with aperture and shutterspeed) and you definitely need a tripod!

Avocados are one of the stealthiest veggies I know. They need to get together with my blueberries asap!

    Those avocados really are sneaky – you’d never guess they were in this smoothie if you didn’t make it yourself!

Looks great–especially mixing in avocado. Never heard of that before but will definitely try considering all the good fats in avocado.

But I’m allergic to dairy so the Greek yogurt won’t work for me. I’d probably also prefer coconut milk instead of almond.

    Hi CiCi! So sad about your dairy allergy – that must be rough trying to find good recipes to try! But here is what I’m thinking, what if you tried condensed coconut milk? That might be a workable replacement for the yogurt!
