Grilled chicken. Pesto. Melty mozzarella. Tomatoes and basil.

This dish is exactly what my Summer needed and I’m willing to bet your Summer needs it too.

We have been so busy this past month with all of the warm weather activities we love so much, but on top of all that madness, our kitchen is under construction. Yes, again. You may remember us being in the same boat two years ago, but we moved and it’s a whole new kitchen we’re remodeling this time around. This one is a doozy of a project.

Everything we own is covered in an 1/8th inch of drywall dust, we have no flooring, the upper cabinets just got ripped out, and our oven is in the basement. In the BASEMENT friends. So we are grilling up the wazoo these days.

This grilled chicken margherita is perfectly juicy and seasoned, topped with gooey, melty mozzarella cheese, 5-minute pesto (the BEST EVER!) and tomato basil relish.

This is one of the dishes that have saved us lately with our kitchen mess, but even if we weren’t tearing apart the heart of our home, this easy, 30-minute meal would still be starring on our dinner table.

Easy, healthy grilled chicken margherita topped with melted mozzarella cheese, pesto, and tomato basil garnish.
Recipe type: Main Dish
Cuisine: American
Serves: 4
  • 4 boneless skinless chicken breasts, pounded to less than 1 inch thickness
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning (OR ½ teaspoon dried oregano + ¼ teaspoon dried basil + ¼ teaspoon dried thyme)
  • 4 slices mozzarella cheese
  • ½ cup basil pesto (try my easy 5 minute pesto recipe - it's the best!!)
  • ½ cup cherry tomatoes, halved
  • 1 tablespoon fresh lemon juice
  • ¼ cup packed basil leaves, very thinly sliced
  • cracked black pepper
  1. In a large bowl combine chicken, salt and pepper, olive oil, garlic power, and Italian seasoning. Toss to combine.
  2. Grill chicken over medium-high heat for about 6-8 minutes on each side until cooked through. Top each piece of chicken with a slice of mozzarella cheese and cook another minute or so until melted.
  3. Toss tomatoes, lemon juice, and basil together. Top each chicken breast with about 3 tablespoons pesto, a scoop of tomatoes, and some freshly cracked black pepper. Serve immediately.

I love your photos, presentation and recipes. It looks so beautiful.
Thank for sharing, Tiffany

This made my photo “what to cook” list this week! I love the colors of the photo with the pesto jar. We just posted Friday about area rugs and my favorite one is this color green. I could not think of a name to call it…now I do. Pesto!-Laurel

hey girl- this looks so good!

There is something quite devastating abut loosing “access” to your own kitchen, especially if the whole room is under construction. When my landlord suddenly decided he wanted to renovate the kitchen cabinets of his/ my kitchen, I had to live off a portable stove for four days – it was excruciating!

Chicken + Pesto + Mozzarella is a winning combo, can’t wait to try this when tomatoes come in to season here! 👍

Made it on 8/12/17– It was really good. Will make it again.

Looks great can’t wait to try it and I’m using tin in as.pictured!

Made this tonight for my boyfriend and I. It was absolutely delicious–great melding of flavors. I heated the pesto in the microwave for 30 seconds just so there weren’t too many cold items atop the warm chicken

Made this yesterday, it is delicious, added this to my recipe collection, sure is a keeper.

I made this for dinner last night. It was quick, easy, and so delicious!

I made this last weekend and the recipe says to cook it 20 – 25 minutes. That’s not nearly enough time. I had to cook it more like an HOUR AND 20 MINUTES. Whoever wrote this recipe abd said to cook it 20 minutes must like to eat their food raw. Once it got done, it was awesome, though.

Amazingly good, so simple to make yet it presents like you spent hours preparing it! Can’t wait to serve it to company.

Amazingly good, yet so easy to prepare. Presents as if you cooked all day. Can’t wait to serve it to my company!

I was very attentive to watch and follow you. I cooked it for family dinner thank you for sharing. I followed you.

I made this tonight with balsamic vinegar in place of the lemon juice and it was SO GOOD! Definitely a meal we’ll be making again!

I am SO happy to hear you loved it as much as we do! Thanks Sharon!

I absolutely love the food! The sour tomato taste makes me crave for that yummy grilled chicken. It looks so great and I pinned it on Pinterest. Thanks for sharing this wonderful recipe with us.

Hi. Do you have the nutritional information on this recipe specifically protein, fat, and carb? Thanks!

I’ve now made this twice and it’s absolutely delicious!! My husband who is a picky eater and can be quite the critic of new meals I prepare gobbled it all down and remarked just how good it was. Thanks for the awesome recipe!!!

Absolutley amazing! nice balance of flavors and the presentation is fabulous! thank you so much for the recipe

Can I bake this in the oven?

Made this for dinner tonight. Absolutely delicious! And one of the prettiest dinners. And I made your homemade pesto. Sooooo much better than the prepared stuff. Thank you for sharing this recipe.

I made this for dinner the other night and it was delicious. We didn’t want to grill the chicken outside because it was so cold, so I grilled in a grill pan on the stove. Will definitely make again.

YUM! Tiffany, I absolutely loved this dish! My husband and kids are weird picky eaters, so I left of the pesto and tomatoes for them and added just to my chicken. Everyone was happy! Thanks for sharing!

Glad you could make it suit everyone and love it!
