Packed with Summer Goodness: During the summer, I love to take advantage of the gorgeous, abundant produce! One of my absolute favorites are summertime peaches. This creamy balsamic peach salad is a vibrant salad where peaches truly shine! Plus, I always add in some ripe berries for a variety of flavors and textures.

Balanced Flavors: This salad brings together a variety of textures and flavors that complement each other beautifully! The sweetness of the peaches contrasts with the creaminess of the avocado and feta cheese, while the crunchy almonds add the perfect bite. Finally, the creamy balsamic dressing ties everything together with its smooth and tangy finish!

  • Peaches: You can use peaches or nectarines in this salad, depending on what is in season!
  • Greens: I used a combination of arugula and spinach here. You can use whatever combination of greens that you have on hand.
  • Berries: I love to add blueberries or blackberries here. Truthfully, any berry would be delicious here!
  • Shaved Almonds: Shaved almonds add a satisfying crunch to the mix. Walnuts or pecans would also go well with this peach balsamic salad.
  • Feta Cheese Crumbles: Salty and tangy, feta cheese brings a perfect contrast to the sweetness of the peaches. Blue cheese or goat cheese can also be used if you prefer!
  • Creamy Balsamic Dressing: I always use my homemade creamy balsamic dressing. It is super easy to make, but if you prefer you can use your favorite store-bought creamy balsamic dressing!

  1. Combine Ingredients: Assemble your salad with greens on the bottom, followed by the fruit, almonds, avocado slices, and feta cheese. 
  2. Dress & Enjoy: Drizzle with balsamic dressing right before serving. Enjoy!

  • Use ripe fruit! The key to a great creamy balsamic peach salad is using peaches or nectarines that are perfectly ripe and juicy. Slightly firm but still soft to the touch is ideal.
  • Choose your favorite crisp greens. Always use fresh, crisp greens to provide the best base for your salad. You can use lettuce, spinach, mixed greens, or arugula!
  • Dress before serving! To keep your salad fresh, drizzle the creamy balsamic dressing just before serving to prevent the greens from wilting.
  • Toast the almonds! I like to toast my shaved almonds for an added depth of flavor. You can buy them already toasted, for ease!

Ingredients 

  • 3-4 peaches or yellow nectarines, sliced into thin wedges, see note.
  • 4-6 cups fresh greens, I used arugula
  • 1 cup blueberries or blackberries
  • cup shaved almonds
  • 1 large avocado, sliced
  • ½ cup feta cheese crumbles
  • 1 cup creamy balsamic dressing, homemade or store-bought

Instructions 

  • Assemble your salad with greens on the bottom, followed by the fruit, almonds, avocado slices, and feta cheese. 
  • Drizzle with balsamic dressing right before serving. Enjoy! 

Notes

  • Peaches/nectarines: both are amazing in this recipe. Use whichever you can get your hands on and is fresh and ripe. 
  • Greens: I used 3-4 cups of arugula and added a couple handfuls  of spinach. Use more or less greens based on how many people you are serving. You can always add another peach or nectarine as well to make the salad go farther!
  • Almonds: You can buy shaved almonds already toasted or stir in them over medium heat on the stove for about 3-4 minutes til toasted. Walnuts or pecans are also delicious.
  • Cheese: goat cheese also goes really well in this salad.
  • Creamy Balsamic Dressing: This is my favorite homemade creamy balsamic dressing and it is truly amazing, but if you are in a rush you can definitely use your favorite store-bought version.
