Mini Chocolate Chip Cookie Dough-nut Ice Cream Sandwiches

Mini cookie dough-nuts filled with vanilla ice cream and topped with hot fudge sauce.

  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1 cup flour
  • 1 egg
  • 1 tablespoon baking powder
  • 1/8 teaspoon salt
  • 2 teaspoons vanilla
  • 4 tablespoons butter
  • 1/2 cup semi-sweet chocolate chips
  • hot fudge sauce
  • vanilla ice cream


  • In a medium bowl mix sugars and butter. Mix in egg and vanilla. Add flour, baking powder, and salt, mixing until just incorporated. Stir in chocolate chips. Using a tablespoon scoop dough into a mini doughnut maker. 
  • After all donuts are done cooking, allow to cool completely in fridge. To assemble sandwiches, scoop one scoop of vanilla ice cream onto doughnut, then gently press second doughnut on top. Drizzle with hot fudge sauce and serve immediately.
